Into a food processor put the garlic and roughly chopped scallions, blitz. Take the pan off the heat and remove the prawns to a tray or large plate (reserve the milk in the pan). I love Asian-style fish or shrimp cakes but almost never order them because I find there's too much filler or 'binder.'
