To make this Rocky Road we are going to do what is called a quick two step "seed" temper. It's really not hard to do but you'll need a chocolate thermometer as a regular candy thermometer does not. - Line a regular (8"x 14") baking pan with wax paper.
- Mix and then melt the butter, milk, and chocolate chips in a saucepan on low heat. You'll want to mix thoroughly and immediately as the homemade milk chocolate won't take long to become a smooth and creamy mixture.
- Once the mixture is melted, remove from heat and in a large mixing bowl stir together with the marshmallows and peanuts.
- Pour the mixture into the lined pan and refrigerate for at least three hours.
