Instructions to make Carrot cheesecake:
Blend all ingredients of the base except carrots and dates. Blend the dates separately.
Take a bowl, add the base mixture, carrots and dates. Mix well like a dough. Now in a cheesecake tin spread the mixture evenly. Refrigerate it for 1/2 hr. Meanwhile prepare the icing.
For the icing, blend all ingredients for it.
Remove the base from the fridge and spread the icing over the base. Keep it in the fridge or freezer for couple of hours.
Remove and garnish it with chopped almonds and lemon zest.
