Wash and chop the spring onions finely (both the green and white part together). Heat oil in a kadai and splutter the mustard seeds, cumin seeds and curry leaves. Then add the chopped spring onion and saute. Add the salt and mix well.

Steps to make Ah Por's Mustard Curry:
  1. Grind onion, garlic, chillies (remove seeds so it will not be spicy), ginger, tumeric, mustard powder together; you will need to add a bit of water to get the blender working right
  2. Add cooking oil and stir blended spices over fire;
  3. Add 2 tablespoon vinegar, 1 tablespoon salt & 1 teaspoon sugar;
  4. When curry mix is hot, add in the chicken
  5. Add water to thin the curry if it's too thick
  6. Stir the pot mix till chicken is tender

Then add the chopped spring onion and saute. Add the salt and mix well. When the oil is hot add in the mustard and cumin seeds. When the mustard seeds start to pop and the cumin seeds turn fragrant, add in the thinly sliced shallots. Saute the shallots until they start to darken then add in the ground cumin, coriander, and turmeric.
