Take 1 1/2 cup brown rice, cooked

Heat the oil in a kadhai on medium flame. Saute the chopped garlic for 30 seconds. Add chopped onion and fry for 1 minute. - Add the chopped veggies, seeds and tomatoes and stir fry in high flame for 4 minutes and take care to keep them crunchy, not overcooked.
Now add the schezwan sauce, peppercorn powder and salt. Mix well. - Add cooked rice now. Stir fry and toss the rice to mix well with sauce and veggies. Garnish with mint and coriander leaves.
