The ingredients needed to make One pot Roast Chicken and Rice:
  1. Get 1 large free range chicken
  2. Make ready 4 shallots diced
  3. Get 1 leek sliced
  4. Get 1 packet smoked bacon lardons

Add the chicken to the rice mixture, then nestle the garlic heads and bay leaves into the rice. Pour the boiling stock or water over the rice and chicken mixture, making sure everything is covered by at least ¼" of liquid (if not, add an additional ¼ cup). Cover the Dutch oven or skillet with a lid, or cover the casserole dish tightly with. Place the chicken over the rice + veggies and then evenly place pats of butter atop the rice and chicken.

  1. Heat the oven to 180 degrees. Take a oven proof/ hob pot with a lid, drizzle in the oil and heat it, brown the whole chicken. Then lift out.

  3. Now throw in the, bacon and veggies into the pot letting them soften. Stir well.
  4. Next add the chicken put on top of the veggies. Sprinkling on the paprika and salt and pepper. Add stock and wine, dunk in the herbs. Cook in the oven with its lid on for approximately 50 mins until cooked right the way through! It boils and steams the chicken so cooks in quicker time!
  5. Lift out the chicken wrap it with foil to keep it warm. Pour the rice into the pot and stir well through the liquid.
  6. Place back on the lid and cook the rice for approximately 20 minutes until soft and all the juices have been absorbed.
  7. Serve as it is or with additional veggies!
